Chablis, how do I love thee? Let me count the ways.

1) Even the very finest Chablis isn’t astronomically priced. Dollar for dollar, you get more for your money when you buy white wine, and I find Chablis is a perfect example.

2) The high acidity makes it a great pairing wine. Chablis loves seafood, yet has enough backbone to standup to heavier sauces and dishes.

3) Living in FL, chilled Chablis is both delicious and refreshing.

This is another lovely little Chablis that makes me very happy. Lemon pith, slate and a hint of tropical fruit on the nose. The minerality shines through with big acidity that is well balanced. A simple offering, but very tasty and oh so drinkable.
